Ube Cheesecake Bars
Ingredients (12 bars)
Crust
- 1 ½ cups graham cracker crumbs
- 5 tbsp melted butter
- 2 tbsp sugar
Cheesecake Filling
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 1 tsp vanilla extract
- ¾ cup ube halaya (purple yam jam) or ube extract
- 1 cup heavy cream (whipped stiff)
Instructions

Make crust: Mix graham crumbs, butter, and sugar. Press into a lined 8×8-inch pan. Chill.

Whip cream: Beat cream to soft peaks; refrigerate.

Cheesecake layer: Blend cream cheese, sugar, vanilla, and ube until smooth. Fold in whipped cream gently.

Assemble: Spread filling over crust. Chill 4–6 hours (preferably overnight).

Serve: Slice into bars. Garnish with coconut flakes or edible flowers if desired.
