Ube Cheesecake Bars


Ingredients (12 bars)

Crust

  • 1 ½ cups graham cracker crumbs
  • 5 tbsp melted butter
  • 2 tbsp sugar

Cheesecake Filling

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ¾ cup ube halaya (purple yam jam) or ube extract
  • 1 cup heavy cream (whipped stiff)


Instructions

  1. Make crust: Mix graham crumbs, butter, and sugar. Press into a lined 8×8-inch pan. Chill.

  2. Whip cream: Beat cream to soft peaks; refrigerate.

  3. Cheesecake layer: Blend cream cheese, sugar, vanilla, and ube until smooth. Fold in whipped cream gently.

  4. Assemble: Spread filling over crust. Chill 4–6 hours (preferably overnight).

  5. Serve: Slice into bars. Garnish with coconut flakes or edible flowers if desired.


Tips & Variations

  • Use ube extract or powder instead of halaya if desired.

  • For a no-bake cheesecake style, use a crust of shortbread cookies or digestive biscuits.
