Ingredients (Serves 4):

  • 1 lb (450 g) ground beef (80/20 recommended)
  • Salt & pepper
  • 4 soft burger buns (brioche or potato)
  • 4 slices American or cheddar cheese
  • Toppings: diced onions, pickles, lettuce, tomato, and burger sauce (mayo + mustard + ketchup)

Instructions:

  1. Prep beef: Divide into 4 loose balls (don’t overwork the meat).

  2. Heat skillet: Preheat cast-iron skillet or griddle over high until smoky-hot.

  3. Smash burgers: Place a meatball in the pan, press firmly with a spatula until ~¼" thick. Season with salt & pepper. Cook 2 min.

  4. Flip & cheese: Flip patties, top with cheese, and cook another minute until melty.

  5. Toast buns: Optional—toast buns in the same pan for extra flavor.

  6. Assemble: Place patties on bun, add toppings and sauce.

Tips & Variations:

  • Double Smash: Stack two patties with cheese in between for extra melty layers.
  • Onion Smash (Oklahoma style): Smash thin onion slices into the patty for caramelized flavor.
  • Creative toppings: Kimchi, bacon, spicy mayo, or vegetarian smash with plant-based patties.\
  • Tools matter: Use a heavy spatula or burger press and a super-hot pan for best results
