Classic Creamy Mac n Cheese

🛒 Ingredients

  • 8 oz (about 2 cups) elbow macaroni
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk (whole or 2%)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella (optional for extra gooeyness)
  • ½ tsp garlic powder
  • ½ tsp mustard powder (optional, for depth of flavor)
  • Salt & pepper, to taste

Optional toppings:

  • ½ cup breadcrumbs
  • 2 tbsp melted butter
  • Cooked bacon bits, herbs, or extra cheese


👩‍🍳 Instructions

  1. Cook the pasta

    • Boil macaroni in salted water until al dente. Drain and set aside.

  2. Make the cheese sauce

    • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute to make a roux.

    • Slowly whisk in milk until smooth and thickened.

  3. Add cheese & seasoning

    • Stir in cheddar and mozzarella until melted. Add garlic powder, mustard powder, salt, and pepper.

  4. Combine pasta & sauce

    • Toss drained macaroni into the cheese sauce until fully coated.

  5. Optional baked version

    • Pour into a baking dish, sprinkle with breadcrumbs mixed with melted butter, and bake at 375°F (190°C) for 20 minutes until golden and bubbly.


💡 Tips & Variations

  • Extra Creamy: Add 2 oz cream cheese to the sauce.

  • Healthier Twist: Use whole wheat pasta and reduced-fat cheese.

  • Spicy Kick: Stir in chopped jalapeños or a dash of hot sauce.
