Ingredients (for 2 servings)
- ½ block (about 7 oz or 200g) firm tofu, crumbled
- 1 tbsp olive oil
- 1 cup fresh spinach or kale, chopped
- 1 tsp nutritional yeast
- ½ tsp garlic powder
- ½ tsp turmeric
- Salt & pepper, to taste
- 2 slices sourdough toast
- Plant-based butter (optional, to spread on toast)

Press & crumble tofu—remove excess moisture.

Heat oil in a skillet over medium heat.

Cook tofu & spices: Add tofu, yeast, garlic powder, turmeric, salt, and pepper. Sauté 3–4 minutes until heated through and slightly golden.

Add greens: Stir in spinach/kale until just wilted (~1 min).

Toast & plate: Spread toast with butter (optional), top with tofu scramble.
